Stained Glass Biscuit Recipe


Hello there, hungry for more, I made these today and I thought they were perfect as a Christmas treat or to eat all year round, use strawberry hard- boiled sweets for a jammy dodger taste. I introduce you to the Stained glass biscuit…

Ingredients:

175g of plain flour plus extra

100g butter at room temperature, cut into chunks

50g golden caster sugar

5tbsp milk

12 fruit-flavoured boiled sweets

Icing sugar, for dusting

Method:

Heat the oven to 180 degrees, or 160 degrees for fan or gas mark 4.

Rub the butter into the flour to fine crumbs.

Add in the sugar and the milk, then turn out and knead briefly on a floured surface until smooth.

Flour the surface again, then roll out the dough to the thickness of a pound coin.

Use cutters to cut out a shape then use a slightly smaller cutter to cut out the middles. Either re - roll the rest or use the cut out shapes and bake them separately.


Lift them onto baking sheets on a baking tray and place a sweet in the hole of each biscuit.

Bake for 15 to 20 minutes or until the biscuits are golden brown and the middles have melted.

Wait for the centres to harden then dust with icing sugar.
